Here is the recipe for BEST Make Ahead Vegan Sandwich with homemade creamy green dressing that you have to try! Less than 15 minutes to make, packed with healthy ingredients, and a veggie sandwich the whole family will love! The perfect easy healthy Breakfast or lunch or dinner idea everyone will want to eat! I love sandwiches packed with flavor that are fun to eat and make. Because sometimes you just feel like eating a sandwich. Right?

For this healthy vegan sandwich use crusty bread like ciabatta, if making ahead, if not you can use bread of your choice. Regular white bread tastes amazing as well.


Layer the bread with the most amazing creamy green dressing, then layer with crunchy lettuce(Living lettuce by mucci farms tastes amazing) ( a fave of mine), crispy onions, bell pepper, cucumber and tomatoes.

  5. It’s vegan, can easily be made gluten-free, and a crowd-pleaser if you are entertaining.
  6. Packed with fresh veggies and creamy dressing all packed in between soft bread or crusty sliced bread. What’s not to love?

This sandwich would also go perfectly with Mayonnaise Marinara Pasta. Recipes that would all be perfect for a nice picnic on a warm, sunny afternoon.

Here is the recipe for BEST Make Ahead Vegan Sandwich with homemade creamy green dressing that you have to try! Ingredients

  • FOR THE “GREEN DRESSING”
  • 1/4 cup olive oil

  • 1/4 cup water

  • 1/3 cup vegan mayo

  • 1/2 cup cilantro leaves

  • 1/2 cup diced green onion

  • 2 cloves of garlic, peeled

  • 1 jalapeno or you can use half if you don’t want it very spicy

  • 1 tbsp maple syrup

  • Lime juice few drops

  • salt to taste

  • FOR THE VEGAN SANDWICH
  • 8 Slices of bread – Ciabatta (if making ahead) or regular white bread.

  • 2 cups fresh Curly Lettuce

  • 1/2 cup sliced red Onions

  • 1/4 cup yellow bell pepper ( or red or orange or green or all colors mixed ) (sliced thin)

  • 1/2 cup sliced tomatoes

  • 1/2 cup sliced cucumbers

Directions

  • Make the Green Dressing
  • Add all dressing ingredients to a mixer jar and grind on high until fully combined into a creamy dressing.
  • Build the Vegan Sandwich
  • Spread the dressing on each slice of the bread to cover it completely.
  • Top the bottom bread with the Lettuce, then add the sliced red onions, sliced bell peppers, sliced cucumbers and sliced tomatoes.
  • Place the top bread onto the bottom bread with all of the veggies and press lightly to secure the filling ingredients. Slice and serve with veggie chips or chips of choice.
