This super easy carrot stir fry is simple, light, tasty and packed with flavor. It is so easy that anybody can make it and the cooking time is only 15 minutes. Carrots are super healthy and in this recipe, we do not cook carrot for long maximizing its nutrients. Carrot fry goes very well with chapati, roti, rice and also as a side dish for dal and rice.

Use the bigger hole side of the grater/shredder to shred carrots.

Easy Carrot Fry

- Skillet
Ingredients
- 2 tbsp Oil
- 1/2 tsp Mustard seeds
- Few Curry leaves
- 1 Big Onion Diced
- 3 Green chilies Slit
- 1/8 tsp Turmeric
- 2 Big Carrots Shredded
- Salt To taste
Instructions
- Wash and peel the skin of carrots. Shred the carrots and keep aside.
- Dice 1 big onion and keep aside.
- Slit 3 green chilies and keep aside.il
- Heat oil in a skillet or a kadhai.
- Once the oil is hot, add mustard seeds and curry leaves.
- Then add the diced onion and green chilies. Saute until the onion turns translucent.
- Add turmeric and saute for another minute on medium flame.
- Now, add shredded carrots and mix everything well.
- Add salt to taste and mix well.
- Cover and cook for 7-8 minutes on low flame. No water needed. Stir once in between.
- The super easy carrot fry is ready.

- Do not cook for too long after adding carrots.
- No need of adding any water to cover and cook.
