Spaghetti aglio e olio simply means spaghetti with garlic and oil in Italian. Originally from Naples, it’s the easiest, most flavorful vegan pasta you can make in under 15 minutes.
This pasta can be made as a weekend meal or late night food due to its ease and accessibility of ingredients, hence the name Weekend Spaghetti.
All you will need are spaghetti, olive oil, and garlic at home, and it can be made any time of the day or night without a trip to the grocery store. Although it simply means olive oil and garlic, there’s lots of other additions that can make this dish extra delicious. Serve this garlicky spaghetti alongside a salad for a complete meal.
You can also add some parmesan cheese if you are not particular about it being vegan.
You can add more or less garlic depending on the size of the cloves and your taste.

Ingredients
1/4 cup extra-virgin olive oil
6 cloves garlic, sliced
2 tsp. crushed red pepper flakes
Salt
150 gms dry spaghetti
2 tbsp. marinara sauce (very little, I used raos marinara)
Juice of 1/2 lemon
2 tbsp. freshly chopped parsley
2 tbsp. basil chiffonade
1/2 c. panko bread crumbs – toasted
Directions
- Place a large pot of salted water with a little olive oil over high heat and bring to a boil. Prepare spaghetti according to package instructions.
- Thinly slice 6 cloves of garlic, chop parsley and basil.
- Heat a skillet on medium flame and add olive oil. Once olive oil is hot, add sliced garlic and chili flakes.
- Once the garlic turns fragrant and golden add cooked spaghetti.
- Stir in marinara, parsley, basil, lemon juice and salt.
- Once everything is mixed well add toasted bread crumbs and toss.
- Once plated add some more bread crumbs and Serve immediately
