Peach & Pistachio Toast

It is summer and that means the peaches are here!!! Peach & Pistachio Toast is a simple, refreshing and healthy option for brunch or a snack. It is a good way to eat peaches. This toast is served on freshly grilled crispy warm bread with basil, peach and pistachios as the main ingredients.

The recipe comes together fairly quickly and will give you a serious burst of flavors in your mouth. I love fresh veggies and fruits. What is fresher than the fruits and vegetables that are in season.

I love pistachios, they are delicious, versatile and fun to eat. I loved using them in this recipe. The pistachios give this toast a hint of subtle, nutty sweetness with a crunch. And they are loaded with healthy fats, fiber, protein, antioxidants and various other nutrients.

This toast is texture heaven with ripe peach, crunchy pistachios and flavorful basil. Also, this toast has the right amount of richness to be filling and full meal. And it looks and tastes fancy !!!

This peach and pistachio toast can be served as an appetizer as well. The recipe can be easily scaled up or down depending upon the number of people you are making it for. It is quick, adaptable and easy to make. The versatility in this recipe is what makes it the best for summer.

It is summer and that means the peaches are here!!! Peach & Pistachio Toast is a simple, refreshing and healthy option for brunch or a snack. It is a good way to eat peaches. This toast is served on freshly grilled crispy warm bread with basil, peach and pistachios as the main ingredients.

Ingredients

  • Ciabatta bread or any other bread – 4 slices

  • Olive oil – 2 tbsp.

  • Peach or Nectarine – 1 large

  • Basil leaves – few

  • Pistachios – 1/4 cup (shelled)

  • Lemon juice – juice from half of a lemon

  • Fresh Mozzarella or Burrata – I used grated fresh mozzarella (bocconcini) but you can also use burrata.

  • Salt and pepper – Dash (optional)

Directions

  • Heat a skillet to medium-high heat. Brush the ciabatta bread slices liberally with olive oil.
  • Place each slice of bread on the skillet and toast until they are golden brown, about 2 minutes.
  • Dice up the peach, chiffonade the basil, chop the pistachios finely and add all the ingredients to a bowl. Add dash of salt and pepper and squeeze in the lemon juice and toss to coat.
  • When the bread has toasted, spread the grated fresh mozzarella on top.
  • Top the toast with the peaches mixture, plus more basil and pistachios for garnish. Eat immediately! In other words, Devour the toast.
