Rainbow Hummus Veggie Wraps are one of my favorite Breakfast, lunch and/or dinner additions. They’re so easy to make, and you can use any veggies you and your kids love. Swap out the hummus for any flavor, too, like red bell pepper hummus or cheesy green hummus.
This one has classic hummus, White cabbage, red bell peppers, orange carrots, green Cucumber, pink turnip pickle and purple onion all rolled up in a tortilla wrap. You could also use sandwich bread flattened with a rolling pin for rainbow sushi sandwiches.
Leave some room at each end of the wrap that is covered in only hummus with no veggies so you have a glue to hold it all together, then roll it tightly and place seam-side down before cutting into bite-sized coins. Seeing all of the colors of the rainbow when it’s lunch time will be sure to get your kids excited to eat!

Ingredients
2 Large Tortilla or Lavash Bread
1/2 cup hummus of choice
Cabbage Shredded or thinly sliced
Carrot grated or thinly sliced
Cucumber thinly sliced
Red bell Pepper thinly sliced
Onion thinly sliced
Pink turnip pickles (Optional)
fresh Spinach
Directions
- Spread hummus evenly on tortilla or lavash bread.
- Place chopped vegetables in rainbow color order towards the middle of the wrap. Leave the edges with just hummus so that it will stick together.
- Roll up tightly, then slice into coins.
Notes
- When making for kids you can skip the pickle and add spinach or lettuce or any other fav vegetable that they like.
